Ingredients

  • 2 teaspoons olive oil
  • 1 pound Spolumbo’s Spicy Italian Original Course Grind Sausage
  • 1 cup white onion — sliced
  • 1 cup red onion — sliced
  • 1 red bell pepper — sliced
  • 1 yellow bell pepper — sliced
  • 1 orange bell pepper — sliced

.

  • 3 garlic cloves — sliced
  • Âľ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ÂĽ teaspoon red pepper flakes
  • ½ cup chicken broth
  • 1 tablespoon chopped parsley
  • 2 tablespoons fresh basil

Directions

1. In a large pan, heat the olive oil over medium heat. Once the oil is hot, add the Spolumbo’s sausage. Cook for about 2 minutes or until it turns brown. Remove from the skillet and set aside.

2. In the same skillet, saute the onions for about 2 minutes, add the bell peppers, garlic, salt, black pepper, and red pepper flakes. Cook for about 5 minutes or until the onions become translucent.

3. Pour the chicken broth to the skillet with the peppers and onions, and scrape the bottom of the skillet to release all the brown bits.

4. Put the sausage back to the skillet, and reduce to medium heat. Cover and simmer for about 10 minutes. Then, uncover the skillet, increase to medium-high heat, and cook for 3 more minutes, just until the liquid is evaporated and the sausage is cooked through.

5. Once done, top with parsley and basil or any herbs and spices you like. Serve and enjoy!
