Bacon Jam Recipe

Ingredients

  • 1 lb thick cut bacon 
  • 2 large onions thickly sliced
  • 1/2 cup brown sugar
  • 1/2 cup water
  •  1/3 cup strong brewed coffee 
  • 1 tbsp balsamic vinegar

Instructions

  1. Cook your bacon in a medium pan until slightly crispy. Remove the bacon from the pan, but don’t forget to reserve the grease! 
  2. Fry your onion in the bacon grease until soft and transluscent. About 5 minutes. 
  3. Add the sugar and continue cooking until your onions are caramelized. About 10-15 minutes.
  4. Add water, coffee, and your reserved bacon to the pan. Cook until the consistency is thick like jam. About 7-10 minutes. 
  5. Finish with balsamic and serve!

Have leftovers? Be sure to let the jam cool completely before transferring to a jar.
