Blackened Chicken Burgers

My family loves burgers!

But with a serious athlete in the mix we needed to find an easy solution to feed the burger-hungry and keep the athlete amongst us happy and fed as well.

We had tried various ways of cooking chicken breast to make chicken burgers, but this is by far one of our favorites!

Lots of flavor (you can adjust the spicy level to suit your family’s taste buds – we love spicy!) and quick to make for those workdays that are also running everyone everywhere type days.

This recipe is for 2 servings, but is easily doubled or tripled and can be done on the BBQ (great for hot summer days!) or cooked in a cast iron skillet (any skillet will do really; cast iron provides the most even cooking)

Ingredients

  • ½ tsp paprika

  • ⅛ tsp salt

  • ¼ tsp cayenne pepper (leave out if you dont like spicy food, add a tiny bit more if you like it spicy!)

  • ¼ tsp cumin

  • ¼ tsp thyme

  • ⅛ tsp fine ground pepper

  • ⅛ tsp onion powder

  • 2 skinless, boneless chicken breasts

  • Buns and topping for your burgers- we used lettuce, green peppers, dill pickles, cheese, chipotle Aoli, tomatoes, etc. 

Instructions

1. Heat BBQ to 350 degrees, or heat a cast iron skillet on the stove until it is smoking hot

2. Mix together all your spices. Lightly oil the chicken breasts with cooking spray on both sides, then coat the chicken breasts evenly with the spice mixture. (you may want to wear gloves for this as it can be difficult to get the cayenne residue off your hands!)

3. Place the chicken on the BBQ turning occasionally until no longer pink in the middle and juices run clear. If cooking in the skillet, pour a tiny bit of oil into the heated pan, cook until no longer pink inside, turning the chicken about halfway through cooking.

4. Place cooked chicken breast on prepared bun, with all your favorite toppings and enjoy!

We also tend to serve a salad or vegetable on the side to help fill everyone and make sure we are getting all our recommended veggies in for the day!
