<p>All you need for this is your favorite variety of fresh or thawed Spolumbo’s sausage. Methods are similar regardless of pork or poultry, you will just want to be careful to cook to the correct internal temperature for the type of meat you choose.</p>

<p>Our sausage is prepared fresh and we use raw ground pork or chicken. So you will need to cook the sausages to a safe internal temperature before eating:</p>

<p>The cooking directions will depend on your desired method. There is no superior technique; they are all great depending on the desired outcome, it’s good to understand more than one cooking alternative, but for these ideas, you will generally want to keep your heat on medium for a gradual cook and turn the sausages often to achieve a uniform heat and colour throughout.</p>

<h4><span style="text-decoration: underline;"><strong>Should I Pierce The Sausages?</strong></span></h4>
<p>Some recipes suggest that you should pierce or score the sausages during cooking. Those sausages have an abundance of excess fat and liquids that need to escape. Spolumbo’s sausages are made from premium whole ground muscle, we do not add fat, fillers, or trim, and therefore our products tend to start leaner than many other typical sausages. For best results we recommend that you<span> </span><strong>DO NOT pierce</strong><span> </span>our sausages during cooking. Those natural juices ensure a moist and flavorful finish that stays IN the product.</p>

<h4><span style="text-decoration: underline;"><strong>On Your Stovetop</strong></span></h4>
<p>1. Cover the bottom of your pan with some water for a bit of liquid to prevent the outside of the sausages from burning while the internal meat simmers slowly to temperature.</p>
<p>2. Cover with a lid to trap in the steam, and cook on medium for around 10-12 minutes.</p>
<p>2. Now uncover to allow the water to evaporate and begin to develop a nice sear on the outside of the sausage by turning frequently until brown.</p>
<p>4. That’s it! Enjoy the sausage on it’s own or add to any recipe.</p>

<p>1. First cover a baking sheet with foil or parchment paper, this will help make cleanup a breeze. Then place the sausages on the lined sheet.</p>
<p>2. Pre-heat oven to 350°F and bake sausages for 20-25 minutes, or until proper internal temperature is reached. Be sure to turn them over once or twice – around every 5-7 minutes to ensure even browning.</p>
<p>3. Let stand outside oven for 5 minutes and serve.</p>
<p>4. Hint – this also works well and tastes great if you take them out of the oven a bit earlier and then finish them for 2-5 minutes on a high-heat open BBQ to add grill marks.</p></div>

<p>1. Heat up your grill on medium-high to about 375°F. We like to sear them on high before letting them sit.</p>
<p>2. Cook for about 15-20 minutes. You will want to turn them consistently to ensure they come out golden brown! Don’t worry if the casings split open, this is a natural behaviour sometimes, but try and keep the opening facing upwards so that most of the juices trying to escape will flow back into the sausage. If the sausage is hot enough to split the casing then it’s a good sign that they are close to being done.</p>
<p>3. That’s it! Cooking Spolumbo’s Sausage on the grill is one of the easiest methods.</p></div>

<p><span style="font-weight: 400;">Maintaining proper food safety and handling practices is important in <strong>keeping your fundraising products fresh and safe to consume. </strong></span></p>
<p><span style="font-weight: 400;">All of the items sold in our fundraisers are <strong>delivered on a refrigerated truck from a federally-inspected facility.</strong> Some of it arrives fresh, and some frozen, depending on the products. </span></p>
<p><span style="font-weight: 400;">While our refrigerated trucks keep everything in great condition, <strong>minimizing the time between pick-up and proper refrigeration is essential. </strong></span></p></div>

<p>We talk about communication a lot when discussing the fundraising process, but that&#8217;s because it&#8217;s so important to success!</p>
<p>Your supporters should know already that they will need to pick up the fundraising products they purchase from your fundraiser on your TeamFund delivery date.</p>
<p>Make sure to communicate with all of your supporters <strong>the date for your delivery day as well as the time. </strong></p>
<p>Be sure to include in your communications that if someone cannot come to the delivery time, they must arrange for someone else to pick their products up on their behalf (and <span style="text-decoration: underline;">store the food safely</span> in the meantime!)</p></div>

<p><span style="font-weight: 400;">When you get home from your fundraiser drop-off, <em>FREEZE YOUR MEAT</em> unless you plan on eating it within 1-2 days! </span></p>
<p><span style="font-weight: 400;">Freezing your meat as soon as possible is important to preserve its flavour and avoid freezer burn. </span></p>
<p><span style="font-weight: 400;">When you freeze your food quickly ensures that the water molecules in your food don’t have time to develop into full ice crystals (like snowflakes).</span></p>
<p><span style="font-weight: 400;">You’ve probably seen these snowflakes on food items that have been frozen for a long time and know from experience that these meats taste the worst because all the moisture has been sucked out.</span></p>
<p><span style="font-weight: 400;">Freezing your foods quickly avoids the issue of ice crystals and </span><b>keeps your meats BBQ-ready for much much longer!</b><span style="font-weight: 400;"> </span></p>

<p><span style="font-weight: 400;">With many minor <a href="https://teamfund.ca/sports-team-fundraising/" target="_blank" rel="noopener">sports teams fundraising</a> with meats and other foods for barbeque season, we felt it was important to help educate parents with the important knowledge of how to properly store and thaw meat.</span></p>

<h3>What Does Proper Meat Storage Mean?</h3>
<p><span style="font-weight: 400;">You may be saying to yourself, “I’ve been putting meat in the freezer for years and never had a problem,&#8221; and fingers crossed, you never will. However, proper food storage can help extend the lifespan of your meat, help it keep its flavour, and help avoid anyone getting sick. </span><span style="font-weight: 400;"></span></p>

<h2><span style="font-weight: 400;">Freezing Your Meat 101</span></h2>
<p><span style="font-weight: 400;">Fundraising with meat for your sports team is one of the most profitable and fastest ways to raise money. </span></p>
<p><span style="font-weight: 400;">However, it is important to remember that meat is meat, and it can go bad if left out. Freezing food you are not using is rules 1, 2 and 3 for proper food storage. </span><span style="font-weight: 400;"></span></p>
<p><span style="font-weight: 400;">Freezing your meat stops the metabolic process of all the microorganisms that live on everything. </span></p>
<p><span style="font-weight: 400;">When they’re frozen, they can’t grow and multiply like they can at room temperature.</span></p>
<p><span style="font-weight: 400;"> This is key because those micro-organisms are what turn your meat bad. By freezing them, you stop them from growing and multiplying and wrecking any delicious meat you’ve gotten from your last fundraiser. </span></p>
<p><span style="font-weight: 400;"><strong>You’ll want to keep your freezer at -18° C or lower to freeze your meats effectively.</strong></span></p>
<p><span style="font-weight: 400;"></span></p>
<p><span style="font-weight: 400;">It is important to remember that once you thaw out your meat, those micro-organisms become active again. </span></p>
<p><span style="font-weight: 400;">You need to thoroughly cook your meat to kill off those organisms before you try your food. </span></p>
<p><span style="font-weight: 400;">Different foods have different minimum temperatures you need to reach to kill off all dangerous organisms. </span></p>

<p><span style="font-weight: 400;">Properly packing meat is critical for preserving your newly acquired fundraiser goodies. Proper storage can help preserve flavour and extend the lifespan of meats in your freezer.</span></p>

<p><span style="font-weight: 400;">The first and most important rule of packing your meat is to minimize your meat’s contact with air. Exposure to air promotes freezer burn and can ruin the taste of your food. </span></p>
<p><span style="font-weight: 400;"></span></p>
<p><span style="font-weight: 400;">One of the best ways to eliminate as much air as possible is to separate the meat into smaller amounts and put them into sealable bags. </span></p>
<p><span style="font-weight: 400;">When you’re sealing the zip lock, press out as much air as you can before sealing the bag. This will help reduce the contact with air.</span></p>

<h3>2. Freeze Your Meat As Quickly As Possible</h3>
<p><span style="font-weight: 400;">When you get home from your meat fundraiser drop-off, FREEZE YOUR MEAT unless you plan on eating it immediately! Freezing your meat as soon as possible is important to preserve its flavour and avoid freezer burn. </span></p>

<p><span style="font-weight: 400;">When you freeze your food quickly, it ensures that the water molecules in your food don’t have time to develop into full ice crystals (like snowflakes). </span></p>
<p><span style="font-weight: 400;">You’ve probably seen these snowflakes on food items that have been frozen for a long time and know from experience that these meats taste the worst because all the moisture has been sucked out.</span></p>

<p><b>Freezing your foods quickly avoids the issue of ice crystals and keeps your meats BBQ-ready for much much longer.</b></p>

<p><span style="font-weight: 400;">This may sound surprising, but you should never thaw food in a container on a countertop. Doing so can leave your meat unsafe to eat. </span></p>

<h3>1. Thawing via Cold Water or in the Refrigerator</h3>
<p><span style="font-weight: 400;">A good practice for safely thawing out your food is moving it from your freezer to your fridge. </span></p>
<p><span style="font-weight: 400;">While still cool, a fridge is warm enough to bring your frozen meats from frozen to thawed safely. </span></p>
<p><span style="font-weight: 400;"><strong>On average, the best temperature to keep your fridge at is 4° C.</strong> </span></p>
<p><span style="font-weight: 400;">This temperature extends the life of your food without totally freezing it. </span></p>
<p><span style="font-weight: 400;">This process of thawing food in the fridge does take time. A good rule of thumb is that for every 5 pounds of weight, your food will require one day to thaw. </span></p>

<p><span style="font-weight: 400;">If you are thawing your food in your microwave, it is important to use the thaw setting until your food has been brought to room temperature.</span></p>
<p><span style="font-weight: 400;"> After it has reached room temperature, you’ll need to set your microwave to cook immediately so you don’t expose your food to the same bacteria floating around in the air.</span></p>

<h2><span style="font-weight: 400;">The Ideal Temperature For Your Freezer</span></h2>
<p><span style="font-weight: 400;">When you are setting your freezer, <strong>keep the temperature at -18° Celsius or below.</strong> </span></p>
<p><span style="font-weight: 400;">Food is safe to eat at this temperature indefinitely (although quality and taste may be compromised after a while). While many foods will freeze at about o° Celsius, they must be stored at 0° Fahrenheit to slow deterioration, so colder is better.</span></p>

<p>So you&#8217;ve made a purchase on a <a href="https://teamfund.ca/fill-your-freezer-fundraiser/">Fill Your Freezer fundraiser</a> to support a school, club, sports team, or other organization (thank you for your contributions!)</p>
<p class="font_9">Now it&#8217;s time to get it home and safely store it. Handling and properly storing your product(s) will ensure product quality is upheld and you can enjoy the product at its peak deliciousness.</p>
<p class="font_9">Many of our products do not contain any preservatives, so the shelf life is shorter.</p>

				<div class="et_pb_text_inner"><h2 class="font_9">Ideal Freezer Temperature</h2>
<p class="font_9">If your freezer manages to freeze food solid, then it&#8217;s running at the correct temperature, right?</p>
<p class="font_9"><strong><em>Turns out:</em> </strong>the temperature at which food freezes and the ideal freezer temperature for a product can be two different things. Even if your freezer seems to be doing its job, you should know the correct temperature to set it to!</p>
<h4 class="font_4"></h4>
<h4 class="font_4"><em>Kitchen Fact: The ideal temperature range for your freezer is -18° Celsius or below.</em></h4>
<p>&nbsp;</p>
<p class="font_9">Food stored at -18° Celsius or below is safe to eat indefinitely (although quality and taste may be compromised after a while).</p>
<p class="font_9">While many foods will freeze at about o° Celsius, they need to be stored at 0° Fahrenheit to slow down deterioration. <strong>Colder is better.</strong></p>
<p class="font_9">And don&#8217;t worry about freezer burn with really cold temperatures — <em>freezer burn is caused by exposure to air, not temperature.</em><em></em></p>
<p class="font_9">To make sure your freezer is running at the correct temperature, get a freezer thermometer to monitor the temperature. Make sure to defrost your freezer every once in a while to ensure it is running efficiently.</p>
<p class="font_9">
<h2 class="font_9">Communicate with Supporters! </h2>
<p class="font_9"><strong><em>Organizers</em></strong>, it is important to remind your sellers and supporters that fresh meat is <strong>PERISHABLE</strong>. (Spolumbos for instance)</p>
<p class="font_9">Portion, Package, and Freeze immediately…while the product is fresh!</p>
<ul class="font_9">
<li>
<p class="font_9">Make sure your refrigerator is set at 4 °C (40 °F) or lower and your freezer at -18 °C (0 °F) or lower.</p>
</li>
</ul>
<p class="font_9">This will keep your food out of the temperature danger zone between 4 °C (40 °F) to 60 °C (140 °F) where bacteria can grow quickly.</p></div>

<h2 class="font_9"><strong>Some General Guidelines for Storing Food:</strong></h2>
<ul class="font_9">
<li>
<p class="font_9"><strong>Refrigerate or freeze perishables right away.</strong> Foods that require refrigeration should be put in the refrigerator as soon as you get them home. Stick to the &#8220;two-hour rule&#8221; for leaving items needing refrigeration out at room temperature. Never allow meat, poultry, seafood, eggs, or produce or other foods that require refrigeration to sit at room temperature for more than two hours—one hour if the air temperature is above 90° F. This also applies to items such as leftovers, &#8220;doggie bags,&#8221; and take-out foods. Also, when putting food away, don&#8217;t crowd the refrigerator or freezer so tightly that air can&#8217;t circulate.</p>
</li>
<li>
<p class="font_9"><strong>Keep your appliances at the proper temperatures.</strong> Keep the refrigerator temperature at or below 40° F (4° C). The freezer temperature should be 0° F (-18° C). Check temperatures periodically. Appliance thermometers are the best way of knowing these temperatures and are generally inexpensive.</p>
</li>
<li>
<p class="font_9"><strong>Check storage directions on labels.</strong> Many items other than meats, vegetables, and dairy products need to be kept cold. If you&#8217;ve neglected to properly refrigerate something, it&#8217;s usually best to throw it out.</p>
</li>
<li>
<p class="font_9"><strong>Use ready-to-eat foods as soon as possible.</strong> Refrigerated ready-to-eat foods such as luncheon meats should be used as soon as possible. The longer they&#8217;re stored in the refrigerator, the more chance Listeria, a bacterium that causes foodborne illness, can grow, especially if the refrigerator temperature is above 40° F (4° C).</p>
</li>
<li>
<p class="font_9"><strong>Be alert for spoiled food.</strong> Anything that looks or smells suspicious should be thrown out. Mold is a sign of spoilage. It can grow even under refrigeration. Mold is not a major health threat, but it can make food unappetizing. The safest practice is to discard food that is moldy.</p>
</li>
<li>
<p class="font_9"><strong>Be aware that food can make you very sick even when it doesn&#8217;t look, smell, or taste spoiled.</strong> That&#8217;s because foodborne illnesses are caused by pathogenic bacteria, which are different from the spoilage bacteria that make foods &#8220;go bad.&#8221; Many pathogenic organisms are present in raw or undercooked meat, poultry, seafood, milk, and eggs; unclean water; and on fruits and vegetables. Keeping these foods properly chilled will slow the growth of bacteria.</p>
</li>
<li>
<p class="font_9"><strong>Follow other recommended food handling practices.</strong> Clean your hands, surfaces and produce, separate raw foods from ready-to-eat foods, and cook to safe temperatures) will further reduce your risk of getting sick.</p>
