<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;"><strong>Cook your bacon in a medium pan until slightly crispy.</strong> Remove the bacon from the pan, but don&#8217;t forget to <em>reserve the grease! </em></span><span style="font-weight: 400;"></span></li>
<li style="font-weight: 400;" aria-level="1"><b>Fry your onion in the bacon grease until soft and transluscent. </b>About 5 minutes. </li>
<li style="font-weight: 400;" aria-level="1"><b>Add the sugar</b> and continue cooking until your onions are caramelized. About 10-15 minutes.</li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;"><strong>Add water, coffee, and your reserved bacon to the pan.</strong> Cook until the consistency is thick like jam. About 7-10 minutes. </span></li>
<li style="font-weight: 400;" aria-level="1"><b>Finish with balsamic and serve!</b></li>

<p><span style="font-weight: 400;">I usually have some form of chicken, always have bacon and everything else is basic pantry staples. </span></p>
<p><span style="font-weight: 400;">This is a meal that is really quite simple to make but has some complex flavors going on.</span></p>
<p><span style="font-weight: 400;"> It is a good one to pull out on an evening when you are running to sports or kids&#8217; activities! </span></p>
<p><span style="font-weight: 400;">My family loves to point out that this is one of Scarlett Witch’s favorite meals because it reminds her of growing up. <em>Hey! Whatever works to get people to eat!</em></span></p>
<p><span style="font-weight: 400;">If you don&#8217;t like things spicy, use smoked or sweet paprika, if you like it hot, feel free to spice it up with spicy paprika! </span></p>
<p><span style="font-weight: 400;">I use a blend of smoky and spicy to try to please all the flavour palettes I have around the house.</span></p></div>

<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">6 slices of Bacon, Diced</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">1 Medium onion, chopped</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">1 Green bell pepper, chopped</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">¼ cup all-purpose flour</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">2 Tablespoons paprika</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">½ teaspoon dried marjoram (can substitute Oregano if needed)</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">1 ½ pounds chicken cut into 1” dice</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">2 cups low sodium chicken broth</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">8 ounces egg noodles</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">½ cup sour cream (or plain greek yogurt)</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">2 tablespoons chopped fresh parsley</span></li>

<p><strong></strong></p>
<p><span style="font-weight: 400;">1. Bring a pot of water to a boil and add enough kosher salt to make the water salty.</span></p>
<p><span style="font-weight: 400;">2. Cook bacon in a separate skillet over medium heat for about 2 minutes.</span></p>
<p><span style="font-weight: 400;">3. Add the onion and the green pepper to the bacon and cook for 3 more minutes.</span></p>
<p><span style="font-weight: 400;">4. Combine the flour, paprika, marjoram, and 1 tsp of salt in a large bowl. Add the chicken and toss to coat.</span></p>
<p><span style="font-weight: 400;">5. Push the bacon and vegetables off to one side in the pan, turn the heat up to medium-high, add the chicken and any remaining flour mixture to the other side, and cook, turning until brown on all sides- about 6 minutes.</span></p>
<p><span style="font-weight: 400;">6. Stir together the chicken, bacon, and vegetables and cook for two more minutes.</span></p>
<p><span style="font-weight: 400;">7. Add the chicken broth to the meat mixture and bring it to a boil. Stir then reduce heat to medium-low cover and cook until chicken is cooked through about 10 minutes.</span></p>
<p><span style="font-weight: 400;">8. Meanwhile, add the egg noodles to the pot of boiling water and cook as per the label directions.</span></p>

<p><span style="font-weight: 400;">Steak tends to be the meat of my boys&#8217; choice most of the time, so it is nice to have a few different ways to prepare it.</span></p>
<p><span style="font-weight: 400;">One way that we enjoy it is coffee-rubbed.</span></p>
<p><span style="font-weight: 400;"> A lot of Red-eye steaks call for gravy to be made with the coffee grounds, which is fine during the winter. </span></p></div>

<p><strong></strong></p>
<ul>
<li><span style="font-weight: 400;">1 Tbsp finely ground coffee beans (fresh is best, but if you don&#8217;t have a grinder, pre-ground works too!)</span></li>
<li>1 ½ tsp packed dark brown sugar</li>
<li>1 tsp Kosher salt</li>
<li>½ tsp onion powder</li>
<li>½ tsp ground coriander</li>
<li>¼ tsp garlic powder</li>
<li>2 (1 to 1 ½ “ thick) striploin steaks- about</li>
<li>2 tsp oil, divided</li>

				<div class="et_pb_text_inner"><h3><strong>Instructions</strong><strong></strong></h3>
<p><span style="font-weight: 400;">1. Combine all ingredients except for the steak and the oil together in a small bowl.</span></p>
<p><span style="font-weight: 400;">2. Rub the spice mixture into the steaks, making sure to season the edges and the sides. Set on a plate at room temperature for at least 15 minutes. Or you can refrigerate uncovered several hours or overnight. Just make sure the steak comes to room temperature before grilling. (This greatly affects how tender your steak will be!)</span></p>
<p><span style="font-weight: 400;">3. Heat an outdoor grill to medium-high, direct heat. Brush each steak with 1 tsp of oil.</span></p>
<p><span style="font-weight: 400;">4. Place the steaks on the grill, cover and grill until grill marks form on the bottom, about 3-4 minutes. </span><span style="font-weight: 400;">Flip the steaks and continue to grill until desired doneness, about 2 minutes for 130-135F or medium-rare. If the steaks are browning too quickly, turn down the gas, or move the steaks to a cooler part of the grill.</span></p>
<p><span style="font-weight: 400;">5. Transfer steaks to a clean cutting board and let rest 5 minutes. Slice steaks on a diagonal to ¼ “ thick slices.</span></p></div>

<p>Whenever it is his turn to cook a meal, some form of Mexican or Tex-Mex is sure to be made that night for dinner!</p>
<p>My family and I have tried many recipes for enchiladas, and this one has been by far the easiest and quickest while still providing lots of great flavor and being filling without having to add a lot of sides to make it stretch to feed 5 big eaters. </p>
<p>I love the flexibility of this recipe as well! </p></div>

<p><span style="font-weight: 400;">2 Tbsp Avocado oil (or olive oil)</span></p>

<p><span style="font-weight: 400;"></span><span style="font-weight: 400;">1 small white onion, peeled and diced</span></p>
</li>

<p><span style="font-weight: 400;"></span><span style="font-weight: 400;">1 ½ lbs boneless skinless chicken breasts diced into ½” cubes</span></p>
</li>
<li>
<p><span style="font-weight: 400;"></span><span style="font-weight: 400;">1 (4 oz) can diced green chiles</span></p>
</li>
<li>
<p><span style="font-weight: 400;"></span><span style="font-weight: 400;">Sea salt and fresh cracked black pepper (to taste)</span></p>
</li>
<li>
<p><span style="font-weight: 400;"></span><span style="font-weight: 400;">1 (15 oz) can black beans, rinsed and drained (optional)</span></p>
</li>
<li>
<p><span style="font-weight: 400;"></span><span style="font-weight: 400;">8 large flour tortillas</span></p>
</li>
<li>
<p><span style="font-weight: 400;"></span><span style="font-weight: 400;">3 cups Mexican blend shredded cheese</span></p>
</li>

<p><span style="font-weight: 400;"></span><span style="font-weight: 400;">1 large can red enchilada sauce (or you can make your own)</span></p>
</li>

<p><span style="font-weight: 400;"></span><span style="font-weight: 400;"><strong>Optional toppings:</strong> cilantro, chopped red onions, green onions, avocado, sour cream, crumbled cotija cheese etc</span><span style="font-weight: 400;"></span></p>

				<div class="et_pb_text_inner"><p><strong>Instructions</strong><strong></strong></p>
<p><span style="font-weight: 400;">1. Preheat your oven to 350 F. Prepare your enchilada sauce (if you are making your own)</span></p>
<p><span style="font-weight: 400;">2. In a large saute pan, heat oil over medium-high heat. Add onion and saute for 3 minutes stirring occasionally. Add diced chicken and green chiles. Season with a generous pinch of salt and pepper. </span></p>
<p><span style="font-weight: 400;">3. Saute for approximately 6-8 minutes, stirring occasionally, or until the chicken is cooked through. Add in the beans (if using) and stir until evenly combined. Remove pan from heat and set aside.</span></p>
<p><span style="font-weight: 400;">4. To assemble the enchiladas, set up an assembly line- tortillas, sauce, chicken mixture, and cheese. Lay out a tortilla, spread 2 tablespoons of sauce over the surface of the tortilla. Add a generous spoonful of the chicken mixture in a line down the center of the tortilla, then sprinkle with a ⅓ cup of cheese. Roll up the tortilla and place in a greased 9&#215;13 baking dish. Continue assembling the remaining enchiladas. Spread the remaining sauce over the top of the rolled enchiladas, followed by the remaining cheese.</span></p>
<p><span style="font-weight: 400;">5. Bake uncovered for 20 minutes until the enchiladas are cooked through and the tortillas are slightly crispy on the outside. </span></p>
<p><span style="font-weight: 400;">6. Serve the enchiladas immediately while they are still all nice and melty, and garnish with all the topping your heart desires!</span></p>

<p><span style="font-weight: 400;"><strong>PRO TIP: </strong>To stretch this recipe even further, you can serve it with a side of Spanish rice and refried beans!</span></p></div>

<li>1/2 cup grated Parmesan</li>
<li>1/2 cup breadcrumbs (or Panko)</li>
<li>4 slices of crumbled <em>cooked</em> bacon</li>
<li>2 tablespoons of parsley</li>
<li>2 tablespoons of olive oil</li>

<p><em></em>1. Preheat your oven to 350 degrees F</p>
<p>2. Line a rimmed baking sheet with parchment paper</p>
<p>3. Remove stems from mushrooms.</p>
<p>2. Mix the grated parmesan, breadcrumbs, crumbled bacon, and parsley in a bowl</p>
<p>3. Place mushrooms onto a sheet tray and then carefully stuff the mushrooms with the filling</p>
<p>4. Drizzle with olive oil and bake for 20 minutes</p>
<p>5. Garnish with parsley.</p></div>

<p><span style="font-weight: 400;">1. Soak 12 wood skewers in water for at least 30 minutes.</span></p>
<p><span style="font-weight: 400;"></span><span style="font-weight: 400;">2. In a medium bowl combine the marinade ingredients. Whisk until well mixed. Reserve 1 cup of the marinade.</span></p>
<p><span style="font-weight: 400;">3. Add beef to the remaining marinade in a bowl. Toss to coat. Cover and marinate at room temperature for 30 minutes. If marinating longer, be sure to refrigerate.</span></p>
<p><span style="font-weight: 400;">4. Meanwhile add reserved 1 cup marinade to a small saucepan and cook on medium, stirring occasionally, until reduced by half</span></p>
<p><span style="font-weight: 400;">5. Prep the pineapple and veggies.</span></p>
<p><span style="font-weight: 400;">6. Pre heat the grill to high. Layer beef and veggies on the skewers. Layer them so ingredients are touching, but not crowded together.</span></p>
<p><span style="font-weight: 400;">7. Grill the kabobs for 2-3 minutes preside, coating with the reduced marinade every time you turn them. </span></p>
<p><span style="font-weight: 400;">8. Remove from grill and serve.</span></p></div>

<li>1 cup jasmine rice, rinsed well</li>
<li>Juice of ½ lime (about 1 Tbsp)</li>

<p><span style="font-weight: 400;">1. In a small saucepan combine, water, pineapple, sugar, butter, salt and red pepper flakes. </span></p>
<p><span style="font-weight: 400;">2. Cover and bring to a simmer over medium heat. Stir in the rinsed rice and bring back to a simmer. Reduce heat to low and simmer, partially covered for 15 minutes or until all the water is absorbed. The rice will be almost done with a slight “bite” to it.</span></p>
<p><span style="font-weight: 400;">3. Remove the pan from the heat and let the rice steam for another 5 minutes, covered. </span></p>
<p><span style="font-weight: 400;">4. Fluff rice with a fork. Stir in the lime juice and chopped cilantro.</span></p>
<p><span style="font-weight: 400;">5. Serve as a side for the Hawaiian Beef Kabobs.</span></p></div>

<p><span style="font-weight: 400;">But with a serious athlete in the mix we needed to find an easy solution to feed the burger-hungry and keep the athlete amongst us happy and fed as well. </span></p>
<p><span style="font-weight: 400;">We had tried various ways of cooking chicken breast to make chicken burgers, but this is by far one of our favorites! </span></p>
<p><span style="font-weight: 400;">Lots of flavor (you can adjust the spicy level to suit your family’s taste buds &#8211; we love spicy!) and quick to make for those workdays that are also running everyone everywhere type days. </span></p></div>

<p><span style="font-weight: 400;">1. Heat BBQ to 350 degrees, or heat a cast iron skillet on the stove until it is smoking hot</span></p>

<p><span style="font-weight: 400;">2. Mix together all your spices. Lightly oil the chicken breasts with cooking spray on both sides, then coat the chicken breasts evenly with the spice mixture. (you may want to wear gloves for this as it can be difficult to get the cayenne residue off your hands!)</span></p>
<p><span style="font-weight: 400;"></span></p>
<p><span style="font-weight: 400;">3. Place the chicken on the BBQ turning occasionally until no longer pink in the middle and juices run clear. If cooking in the skillet, pour a tiny bit of oil into the heated pan, cook until no longer pink inside, turning the chicken about halfway through cooking.</span><span style="font-weight: 400;"></span></p>

<p><span style="font-weight: 400;">4. Place cooked chicken breast on prepared bun, with all your favorite toppings and enjoy!</span></p>

<p><span style="font-weight: 400;">4 Cups Broccoli cut into bite sized florets</span></p>
<p><span style="font-weight: 400;">1 Cup Red pepper large dice</span></p>
<p><span style="font-weight: 400;">2 Cloves of garlic, minced</span></p>
<p><span style="font-weight: 400;">½ Teaspoon fresh ginger, grated fine</span></p>
<p><span style="font-weight: 400;">2 green onions, diced</span></p>
<p><span style="font-weight: 400;">2 handfuls of bean sprouts</span></p></div>

<p><span style="font-weight: 400;">1. Whisk sauce ingredient<strong>s</strong> in a small bowl. Set aside.</span></p>
<p><span style="font-weight: 400;">2. Bring 4 cups of water to a boil and stir in the Ramen noodles. Cook 3 minutes and drain, reserving 1 cup of the liquid.</span></p>
<p><span style="font-weight: 400;">3. Cook vegetables in a hot skillet over medium heat until tender-crisp, about 3-4 minutes. </span></p>
<p><span style="font-weight: 400;">4. Add ginger and garlic, cook 1 more minute.</span></p>
<p><span style="font-weight: 400;">5. Add sauce and simmer until thickened, about 3-5 minutes.</span></p>
<p><span style="font-weight: 400;">6. Stir in the ramen noodles. Add pasta water a little at a time until desired consistency.</span></p>
<p><span style="font-weight: 400;">7. Serve with bean sprouts and green onions on top as a garnish (or add lots if you prefer!)</span></p></div>

<p>After everyone ate their fill of fresh berries, I still had some left that I wanted to use. I thought why not use them for dinner!</p>
<p>This meal ended up tasting like Christmas Dinner with a summery twist, and even my picky eater liked it!</p>

<li><span style="font-weight: 400;"></span><span style="font-weight: 400;">1 tsp salt</span></li>
<li><span style="font-weight: 400;"></span><span style="font-weight: 400;">1 small white onion, thinly sliced</span></li>
<li><span style="font-weight: 400;"></span><span style="font-weight: 400;">2 cups of blueberries, rinsed and stems removed</span></li>
<li><span style="font-weight: 400;"></span><span style="font-weight: 400;">½ cup balsamic vinegar</span></li>
<li><span style="font-weight: 400;"></span><span style="font-weight: 400;">½ cup maple syrup (the real stuff!!)</span></li>
<li><span style="font-weight: 400;"></span><span style="font-weight: 400;">1 tbsp chopped rosemary</span></li>

<p><span style="font-weight: 400;">1. Preheat over to 350 F</span></p>
<p><span style="font-weight: 400;">2. Heat 1 tbsp each of olive oil and butter in a large heavy skillet</span></p>
<p><span style="font-weight: 400;">3. Season chicken with ½ tsp salt and ¼ tsp pepper.</span></p>
<p><span style="font-weight: 400;">4. Add chicken to the pan after butter has melted and is hot and bubbly.</span></p>
<p><span style="font-weight: 400;">5. Sear chicken breasts over medium-high heat until lightly browned.</span></p>
<p><span style="font-weight: 400;">6. Remove from the pan and place in a baking dish, set aside.</span></p>
<p><span style="font-weight: 400;">7. Add remaining olive oil and butter to the skillet.</span></p>
<p><span style="font-weight: 400;">8. Add onions and cook until soft and lightly carmelized, about 3-4 minutes.</span></p>
<p><span style="font-weight: 400;">9. Add blueberries and cook 1 minute.</span></p>
<p><span style="font-weight: 400;">10. Stir in vinegar, maple syrup, herbs, and remaining salt.</span></p>
<p><span style="font-weight: 400;">11. Simmer about 10 minutes until blueberries have softened.</span></p>
<p><span style="font-weight: 400;">12. Pour the blueberry balsamic mixture over the chicken and bake in the oven for 20 minutes.</span></p>
<p><span style="font-weight: 400;">13. Chicken should no longer be pink in the middle and reach an internal temperature of 165F</span></p></div>

<li>1 1/2lbs chicken breast (approximately 4 medium) We used Bow River Meats All Natural Chicken</li>
<li>½ cup all-purpose flour</li>
<li>¾ tsp salt</li>
<li>½ tsp fresh ground black pepper</li>
<li>2 large eggs, beaten well with a fork</li>
<li>½ cup plain panko or bread crumbs</li>
<li>⅓ cup finely grated parmesan (you want the real stuff, not out of a shaker)</li>
<li>3 Tbsp olive oil, plus more as needed</li>
<li>2 cups marinara sauce (your own or your favorite from a jar)</li>
<li>1 ½ cups shredded mozzarella cheese, divided</li>
</ul></div>

				<div class="et_pb_text_inner"><p><strong>Instructions</strong><strong></strong></p>
<p>Have your chicken breasts defrosted (or mostly defrosted) in your kitchen.<strong></strong></p>
<ol>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;"><strong>Season your chicken breast</strong> with salt and pepper. Cut a deep slit into each breast, without cutting all the way through (butterfly it). Stuff each breast with 2-3 Tbsp of mozzarella, closing the edges to seal.</span><span style="font-weight: 400;"></span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;"><strong>Set up 3 pie plates</strong>. On the first pie plate, place the flour. In the second beat the eggs with a fork with a small splash of milk (milk is optional). In the third, combine the panko and the grated parmesan.</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;"><strong>Working with 1</strong> stuffed breast at a time, carefully dredge in flour, tapping off any excess. Next dip into the beaten eggs, letting excess egg drip back into the pie plate. Finally dip in the panko mixture, turning a couple of times to ensure a good coating.</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;"><strong>Heat the olive oil</strong> in a large deep pan or dutch oven. Ensure the oil coats the pan. When the oil is hot, add the breaded chicken to the pan in a single layer and saute for approximately 4 minutes per side or until golden brown on both sides.</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;"><strong>Pour the marinara</strong> around the chicken breast and spoon a bit onto each breast. Sprinkle the remaining mozzarella over the stuffed chicken. Bake uncovered at 400 F for 15-20 minutes or until an instant-read thermometer reads 165 F when inserted into the chicken. </span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">Serve over a long pasta like spaghetti or fettuccine. </span></li>
