Grilled Hawaiian Beef Kabobs

Prep time: 45 minutes | Cook time: 15 minutes | Total time: approx. 1 hour | Serves: 12 skewers

Boys!!

Whenever we ask our family what they would like to eat, the boys answer, “steak.”

Ugh. Some of us can only eat so much steak before we are bored of the flavors and presentation!

Thankfully, we have some palettes in the house who were willing to try some new flavors!

I made these kabobs as a way to satisfy my boys’ desire for steak, my athletic daughter’s need for vegetables and fruit, and my husband’s recent pineapple craving.

I must say we instantly fell in love with these flavours and the ease of this recipe – and it is now in the regular rotation!

I served these with pineapple rice (recipe also included below) and a salad to balance everything out.

Ingredients

Marinade

  • 6 oz pineapple juice
  • ÂĽ cup low sodium soy sauce
  • ÂĽ olive oil
  • ÂĽ cup brown sugar
  • ÂĽ cup apple cider vinegar
  • 1 tbsp blackstrap molasses
  • 2 tsp minced ginger
  • 2 tsp minced garlic
  • 6 oz pineapple juice
  • ÂĽ cup low sodium soy sauce
  • ÂĽ olive oil
  • ÂĽ cup brown sugar
  • ÂĽ cup apple cider vinegar
  • 1 tbsp blackstrap molasses
  • 2 tsp minced ginger
  • 2 tsp minced garlic

Beef Kabobs

  • 1 ½ pounds top sirloin steak cut into 1” pieces
  • 1 red pepper cut into 1” pieces
  • 1 green pepper cut into 1” pieces
  • ½ fresh pineapple cut into 1” chunks
  • Mushrooms
  • ÂĽ red onion cut into 1” pieces

Instructions

1. Soak 12 wood skewers in water for at least 30 minutes.

2. In a medium bowl combine the marinade ingredients. Whisk until well mixed. Reserve 1 cup of the marinade.

3. Add beef to the remaining marinade in a bowl. Toss to coat. Cover and marinate at room temperature for 30 minutes. If marinating longer, be sure to refrigerate.

4. Meanwhile add reserved 1 cup marinade to a small saucepan and cook on medium, stirring occasionally, until reduced by half

5. Prep the pineapple and veggies.

6. Pre heat the grill to high. Layer beef and veggies on the skewers. Layer them so ingredients are touching, but not crowded together.

7. Grill the kabobs for 2-3 minutes preside, coating with the reduced marinade every time you turn them.

8. Remove from grill and serve.

Pineapple Rice

Prep time: 10 minutes | Cook time: 15 minutes | Total time: 25 minutes | Serves: 4-6

This pineapple rice makes a great addition to the beef skewers for a little more substance! 

Ingredients

  • 1 ½ cups water
  • 1 8 0z can of crushed pineapple in juice
  • 2 tsp brown sugar
  • 1 Tbsp unsalted butter
  • ½ tsp KOSHER salt
  • ÂĽ-½ tsp red pepper flakes
  • 1 cup jasmine rice, rinsed well
  • Juice of ½ lime (about 1 Tbsp)
  • Fresh cilantro, chopped

Instructions

1. In a small saucepan combine, water, pineapple, sugar, butter, salt and red pepper flakes.

2. Cover and bring to a simmer over medium heat. Stir in the rinsed rice and bring back to a simmer. Reduce heat to low and simmer, partially covered for 15 minutes or until all the water is absorbed. The rice will be almost done with a slight “bite” to it.

3. Remove the pan from the heat and let the rice steam for another 5 minutes, covered.

4. Fluff rice with a fork. Stir in the lime juice and chopped cilantro.

5. Serve as a side for the Hawaiian Beef Kabobs.
