Beef and Broccoli Stir Fry

Beef and Broccoli Stir Fry is a delicious and easy meal for after a busy day. 

It only takes 20 minutes to come together and is one of our favourite ways to use the beef from our TeamFund Fundraisers!

Ingredients

Sauce:

¼ cup Hoisin Sauce

¼ cup water

1 Tablespoon Low Sodium Soy Sauce

1 ½ teaspoons cornstarch

½ Teaspoon Sesame Oil

¼ Teaspoon Red Pepper Flakes (optional)

Salt and pepper to taste

Stir Fry:

2 -6 ounce packages Ramen (save flavor packets for another purpose)

4 Cups Broccoli cut into bite sized florets

1 Cup Red pepper large dice

2 Cloves of garlic, minced

½ Teaspoon fresh ginger, grated fine

2 green onions, diced

2 handfuls of bean sprouts

Instructions

1. Whisk sauce ingredients in a small bowl. Set aside.

2. Bring 4 cups of water to a boil and stir in the Ramen noodles. Cook 3 minutes and drain, reserving 1 cup of the liquid.

3. Cook vegetables in a hot skillet over medium heat until tender-crisp, about 3-4 minutes.

4. Add ginger and garlic, cook 1 more minute.

5. Add sauce and simmer until thickened, about 3-5 minutes.

6. Stir in the ramen noodles. Add pasta water a little at a time until desired consistency.

7. Serve with bean sprouts and green onions on top as a garnish (or add lots if you prefer!)
